When I came up with the idea of culinary tourism in the mid-1990s, I used it to explore what it means for individuals to eat food from cultures other than their own. Since then I expanded and refined the concept partly to acknowledge more the role of power in shaping those experiences. Also, there are multiple ways of being a tourist that are more respectful than the stereotype of the overbearing, insensitive tourism. Being a pilgrim is a type of tourism that approaches the experience with respect. The BBC interviewed me about food pilgrimages, and that interview was then picked up by the Splendid Table on American Public Radio:
